Taco Night

I LOVE taco night. The secret is to fry up the shells. Sure it's not the healthiest alternative, but I guarantee it's way better than the already fried shells you buy in the store. And they have a crispy/chewy quality. Last night I made them with white corn tortillas, and they were fantastic! Another tip to try is to put a little PacePicante sauce in the taco meat when it's almost done cooking (you can even use turkey meat, and it's delicious). Don't forget the Horchata (Fresh & Easy sells it in the milk section, and it's just as good as a restaurant)!

Finn wasn't totally convinced...he fed most of his dinner to the puppies, then fell asleep by 7pm. I think he was just a tired little guy who refused to nap yesterday:

those shells look amazing. nice job! i make my own tortilla chips but never thought to make my own shells...but I hate getting splattered by hot grease...I cry like a baby! I think we will have taco night next week...I am suddenly craving them!

The trick with the shells is to keep it on high, but not the highest. I have to put it on 9 not to splatter, but can't go any lower. Then I put the whole tortilla in and immediately fold it and hold it with the tongs in the curled shape (it will still be kinda floppy). Let the one side get crispy, then flip and hold the other edge up. If you let it lay flat in the oil too long they bubble up, and then it's impossible to get the good open fold because you have a big bubble pouf. :)

Oh goodness, does that take me back to my childhood! Saturday night was taco night in our house, and that's exactly how we made our shells. I couldn't eat tacos for years after that (too much of a good thing), but now I love making them for my own family.

thanks for the "how-to"! I think I will try it. I would have had no idea and would have just folded them flat with no room for filling!
